If you're looking to slice Peking duck, grilled chicken, or sugar snap peas, look no further than this knife. It's quite adept at dealing with involved slicing tasks. The blade measures 7½” by 1¾" and looks like a light Chinese cleaver combined with the classic Japanese usuba vegetable knife. This attractive cleaver is made of chrome molybdenum stainless steel finished with a bobinga--African rosewood--handle.

I learned how to cook using a Joyce Chen cleaver and was excited to buy my own when I moved into my own apartment. The knife has a good weight to it: not too heavy and not too light. It's a great knife for practically anything: from chopping meat to finely shreading ginger. I highly recommend this item.
