For fast slicing and fine juliennes (and easy cleaning), many professional chefs use this Japanese-made mandoline, consisting of a simple plastic tray that holds a razor-sharp straight blade set at an angle. To adjust the thickness of your slice, from nearly transparent to 1/8", a knob moves the front of the tray up or down. Simply stick the fruit or vegetable on the finger guard and slide it down the tray and over the blade; a perfect slice falls below. The cutter comes with three julienning blades, which produce strips ranging from hair-thin to 1/4" wide.
by daniel (Manchester, NH) 1 review mandoline slicers can be VERY dangerous. the safety bar on this slicer is easily omitted, causing the type of injury I got on my first use: slice tip right middle finger off. it sounds worse than it was, but it did bleed for two days and i was NOT about to go the emergency room for this. a nurse friend just smeared superglue on it. this is a great value, a nice mandoline, but you have to be careful!!!
by Debbie (CLIFTON PARK, NY) 1 review This machine makes cutting matchstick size a breeze. Many asian recipes call for julienne cuts, paper-thin cuts, or matchstick size cuts. Clean up is a breeze. I don't really use the grater inside, so the slanted angle of the container is a little bit of a disadvantage since I can't fit as much shredded material inside. I use one of the shredding inserts frequenly and don't know how one of the points got bent (so I'm a little disappointed in the durability of that part). Otherwise a great buy and well worth the money!
