This Mousse Truffee (Truffle Mousse) is pork-free and much like a pate that is silky smooth, made from organic chicken and turkey liver, Port wine studded with 2-percent black truffles. The mousse is made spreadable yet firm enough to slice. A 2- to 3-oz. portion makes the ideal appetizer, served with some crusty French bread and a glass of your favorite red wine. Or fill a pastry bag and pipe it onto crackers and serve it as part of an hors d'oeuvres platter.
