Basically what happens is that it smashes the herbs into the cutting blades and what isn't pushed up into the cutting area/blades is smashed onto the plate. I have lousy knives, so thought this might help me cut herbs and greens. Boy was I wrong. Even my cheap dull knives did a better job than this did brand new. There may be one 'herb' that it is good for, but unless you want to waste your money to find that herb, just buy a knife. For the cost of this thing, you can get a relatively good knife that will work better than this and can be used for something else.
