by Joseph (Rome, NY) 1 review In the past I have always used J.A. Henkel knives and have been pretty happy with the results. I had been looking to buy a 10" chef's knife to compliment the 8" size I had been using. I thought the extra heft would come in handy for processing larger vegetables. Trouble was that the price for the Henkel 10" blade was always north of $130.
When I saw that the Wusthof was being offered for sale at well under a 100 bucks I thought well even if it does not come up to Henkel standards it will still be worth the money.
I'm happy to report that I'm actually happier with the Wusthof. It has a sharper edge and retains that edge longer in between sharpening than does the Henkel. I also prefer the Wusthof's handle. Turn about is fair play especially when it comes at such an attractive price. The Henkel is now playing backup to my new Wusthof.
