Calphalon Chef's Knife and Santoku Knife Set:


From Calphalon's Traditional line of cutlery, this indispensable set of two essential cooks knives – an 8-in. Chef's Knife and a 5-in. Hollow-Edge Santoku Knife.

Chef's Knife: Ask any professional chef and you'll find out, the Chef's Knife is the most indispensable of all the knives in the kitchen. Perfectly diced onions and peppers, slender zucchini matchsticks, roll cut carrots and thinly shredded cabbages are just a few strokes away with this powerful, versatile tool. Notice how the blade edge of the Chef's Knife is gently curved, from tip to heel. That's to allow you to use a gentle, even rocking and gliding motion as you cut. The length and weight of the blade helps you work more efficiently. (The longer and heavier the blade, the less muscle you have to put behind it!) Use the whole blade to cut larger items like potatoes and Spanish onions into slices or strips. The bolster gives the knife weight at the heel so the back half of the blade can be used to make smaller cuts. The flat of the blade can be used to lightly "whack" the skins from garlic cloves, too.

Santoku Knife: Combining features of a chef's knife and a cleaver, the Santoku is an all purpose Asian-style knife that's ideal for cutting meat, fish and vegetables. The word santoku means "three good things" - a reference to the three cutting tasks it performs so well: slicing, dicing and mincing. The Santoku is designed with kullens, or indentations along its edges, which reduce friction and prevent food from sticking to the blade. The knife also serves as a spatula as you cut, removing cut foods quickly and easily from the cutting surface.

Though the handle on the chef knife is not too comfortable when slicing through something big and tough, like a winter squash, and there are a couple a tiny rusts spots showing up (that can be removed with steel wool) - these knives are sharp and easy to sharpen when necessary and have held up well for the money.

I have other Calphalon products and they never have disappointed me... they all are superior in their quality.

I'm not a knife expert, so I know many will swear by their Henckel or Wustof knives. But these Calphalon knives have given great service since I bought them almost a year ago. They keep a keen edge through lots of use and sharpen easily when needed. I've put the larger knife to the test especially, as it is great for chopping and slicing apples, potatoes, and other hard fruits and veggies. The smaller knife is great for cutting up herbs and smaller veggies. This set is a good investment for the everyday cook.

It is OK.
I have Henckels knives and they cuts better than this.
But for everyday cooking, this is just fine.
