It will withstand up to 500F, so it's great for cooking items that would fall through the somewhat too far apart rack in our cooker. Fish, chicken wings & drumsticks, onion chunks, etc. cook perfectly on the griddle. Also, we can shut down one side of the bbq & put the griddle over there to use as a "keep hot" surface in order to separate rare, medium, & well done food items.
