These twice-fried potatoes are a nice addition to any meal. If you don't have a deep fryer, simply use a heavy-bottom stock pot and fill with oil. Peanut oil or grapeseed oil is good alternatives to vegetable oil because of their high smoke point. Halibut is a low-fat, firm white fish that has a mild flavor. Halibut is suitable for almost any preparation ranging from grilling to sautéing. Paired with sautéed vegetables, this flavorful dish is very versatile. In place of a sweet dessert, substitute freshly brewed coffee. This velvety coffee drink is nice when paired with a simple plain wafer. For a sweeter version known as Café Mocha, add powdered chocolate to the milk.
