This herbed turkey breast is a snap to prepare. Forego stuffing in this menu for nutty, tasty (and healthier) wild rice and mushroom pilaf and serve a seasonal spinach salad with ripe persimmons for a splash of color. For a surprise dessert, honey-baked figs are full of rich flavor without the rich calorie count.
Preparation Plan: In the morning, prepare the pilaf and make the salad dressing. 3 hours before serving, preheat oven, prepare turkey and place in oven. Reheat the pilaf. 30 minutes before serving prepare the salad leaves and fruit (do not toss with dressing until serving). Prepare the roasting pan with the figs to be oven-ready. As your guests are near the end of eating their main courses, place the figs in the oven. Bake for 8 to 10 minutes, then create the sauce and set aside. Plate the figs and sauce with ice cream when guests are ready for dessert. |
