Beets are round root vegetables known for their deep red bulbs and their long, dark green stalks and leaves. The dense, deep-red flesh is enclosed by a dark, papery skin that is peeled away before eating. Other varieties have golden yellow, light orange, or creamy white flesh. Both roots and greens are edible. Store beets with roots intact and greens trimmed to 1 inch (2.5 cm). Enclosed in a plastic bag, they will keep for up to 1 month in the refrigerator; the greens will keep for 3 to 5 days. Beet roots are sold precooked and peeled in cans.
