Turnips are small, creamy white root vegetables, tinged purple or green at the crown. They have firm, pungent, yet slightly sweet flesh that is generally cooked by boiling, braising, or stewing. Choose smaller turnips that feel heavy for their size and are firm to the touch. Refrigerate in a plastic bag for up to 1 week.
