Very Tasty! It's being added to the rotation!
Quite tasty and a nice way to present individual portions of frittata. I couldn't see any benefit to adding ingredients layer by layer, so I mixed all the vegetables and meats together once cooked; a scant quarter-cup was just right for 12 muffins. Also, if you feel compelled to go low-fat, just sub awayuse Egg Beaters, turkey bacon/sausage, low-fat cheese, etc. You will compromise flavor but feel virtuous, I suppose!

Delicious mini breakfast frittata
Thanks to the previous reviewer who recommended combining the egg mixture with the veggies & meat, I had no problems getting them out of the pan. Also, to make them healthier, I substituted non-fat milk with a 1/2 Tbsp of cornstarch for the whipping cream and eliminated the bacon, using only turkey sausage crumbles. The muffins were fluffy and delicious! I would definitely make them again.

good brunch item
My husband gave this a 4-star rating (his highest). I skipped the sausage and added a bit more bacon. The only drawback was removing the "muffins" from the pan; I think it will work better if the veggies and bacon are incorporated into the egg mixture. As it was, the layer of bacon and veggies remained stuck in the tin a bit.
