Not authentic Hungarian Gulyas
Original and Authentic Gulyas is made with either mutton or lamb for the simple reason the Gulyas was first made by Magyar(Hungarian) sheep herders who had ready access to what? SHEEP. Any other type of meat used is strictly for personal taste.

Gulyas Leves (Soup)
Hungarians originally used Lard (same as bacon fat or Butter). I use it at times but mostly Olive Oil.
