tempting
Exchanging a pound of butter for 2 Tablespoons was very tempting. The results were quite satisfactory. I would suggest adjusting the cake to reduce the sweetness. Also I forgot the last two eggwhites but it didn't seem to effect the cake texture at all. This recipe produced a nice looking cake; but grainy due to the nature of pears.

Tasty, but Labor intensive
this was my first shot at poundcake and my standard is Sara Lee's frozen one, so I wasn't sure what to expect. The flavor of this one was good and so was the texture, mostly, dense, solid like a pound cake should be, but it was a bit labor intensive due to having to cook the pears down --

This cake cooks up very nicely, however, I'm not crazy about the texture with the pears in it. I don't like the granular feeling on my teeth. I'm going to try it again but with applesauce.
