Great but with a couple changes
I had a butternut squash sitting unused on my counter top for the longest time while I searched for the perfect recipe, and I found it! However, I made a couple of changes. Instead of just butternut squash I used 50/50 squash & cubed turnips. Also, instead of garlic, I used freshly grated ginger (you could also use jarred minced ginger). I cut the amount of butter in 1/2 substituting olive oil & instead of using breadcrumbs for topping I used yeast flakes and Parmesan cheese (no butter)

A rousing success
I made a double batch for a family dinner for 8. I followed the recipe as written, and I wouldn't change a thing. Everyone, even my soon-to-be son-in-law who'd never eaten squash, loved it. There were hardly any leftovers, darn it! I will definitely make it again.

A definite keeper!
I was looking for a recipe to use up some butternut squash that was "different." And this is a real winner! My daughter said "garlic on butternut squash?" but when she tasted it her eyes lit up! And then you add the sauteed onions, sage, cream, and crumb topping... it's awesome! I obviously highly recommend this recipe.
