volume is for a wedding cake
for those of you who are confused, as you can see this is from Martha's Wedding Cake book. It's 9 cups of batter. A regular 3 layer cake will take about half that. So divide the recipe in half. If you were making the huge wedding cake in her book, you would need to make 3 times this amount of batter. It even states how long each layer needs to bake based on volume.

Ginger??
The ingredients only state fresh ginger, but in step 2 of the directions it states to add both fresh ginger and ground ginger to the mix. Which one is correct?

It's a WEDDING CAKE!
I think people are confused by this recipe because they don't realize the recipe and instructions are for a multi-tiered wedding cake. If you just want one cake, then I suppose you could just make the recipe once.

I used this recipe for one of my wedding cakes...
and it was fab. My hubby and I made 6 different cakes and this was the best: no cracking, even tops, perfect texture. I iced it with coffee Neoclassic Buttercream from the Cake Bible. To Cheryl in GA who didn't understand the recipe: depending on the size of your cake, you may have to adjust the recipe, which makes 9 cups. The original is for a tiered wedding cake with 3 layers each tier, hence the instruction to multiply. I've made this twice and it's actually quite easy! Hope this helps. :)

What is so complicated?
Okay, I'm reading this recipe, and I can't see anywhere that could cause confusion. As for the icing, it's icing, what's the big deal?!

confused
Tis recipe is confusing.What do you mean you have to make the recipe 3 times. Then you have to bake each cake separtely and it doesn't give the amount of time it takes to bake. Then when it's all baked there is no recipe for the frosting. I would be in the kitchen all day if I decided it was worth the cost to make it. (not worth it) when publishing recipes it would help if all the instructions were there especially the frosting.

WHAT?
I didn't understand a thing about this recipe! You have to make the ENTIRE recipe given three times? The cost alone would be prohibitive! The photo appears to be a simple three layer cake but the instructions are so crazy that I can't make heads nor tails of them!
