BUTTER vs VEGETABLE OIL...
Using butter in this cake instead of oil makes a whole world of difference... Butter is the ingredient that boost flavor and enriches texture; keeping the cake just as moist. I have been baking for over 38 years. This type of cake should be rich and eaten for very special occasions... ; )

Definitely not the original
I made this one to try it. Never again. The original recipe was in the old Mennonite cookbook. I've made it hundreds of times and it is by far superior. It is almost identical, but they used 4 ounces melted semi sweet chocolate and one pound of beets to make it red. Cook the beets and put them in a food processor. Once you've had this one, you will never go back.

Easy and Elegant
This was my first ever Red Velvet Cake attempt and it couldn't have been easier. I was making it for a friend's party and promised cream cheese icing, so I didn't try to do the authentic icing, but I'd like to try that next time.

My first experiance at making a Red Velvet
Made this for the office - in a 15x11 - OMG - folks flipped for it. Soooo rich, sooo moist - BUT - when I make it again, think I will cut the receipe in half - because it truly is an extra large receipe!!! Make it - you will not be dissapointed!!

Not the true Red Velvet Cake!!
My mother got the original red velvet cake recipe back in the last 50's or early 60's. I am always very upset when people put a cream cheese frosting in this cake. The original red velvet cake's frosting is a cooked frosting and it is not a real sweet frosting. IT DOES NOT HAVE CREAM CHEESE IN IT! I know that most people put a cr. cheese frosting on it - but that is not correct! If you ever have this cake with the correct frosting - you will love it. It is awesome!

Unbelievably Delicious!!
This is so moist, flavorful and perfect! The touch of dusted cocoa adds a nice hint of chocolate. I love the texture and weight. Any weight gain is worth it on this cake. The only drawback is the three layers. It is hard to work with and mine always turns out a bit lop-sided.:( I'm going to make a two layer this time with the extra batter used to make cupcakes. We'll see what happens with that configuration.

Fantastic!
I made this cake for a friends birthday and it was fantastic! I baked it into a rectangular cake though so it would be easier to cut and divy up. It was amazing! I did not use the food coloring because some of the other reviews said it was not needed. The cake was reddish. Next time I would use the dye but the rest can stay exactly as is! This recipe was awesome and I got a lot of compliments.

Fabulous
I made this cake, and oh my goodness! It was so beautiful and so delicious. Best Red Velvet cake receipe ever. All other receipes pale in comparison. Shared it with lots of friends and all were of the same opinion. Will definitely make it over and over.

red food coloring not necessary
I've made red velvet cake and the chemical reaction of the cocoa and buttermilk mixture (I think) is what makes the cake red. This looks very much like my recipe, and will most definitely try it out. I never needed or used red food coloring, and it turned out a gorgeous dark red. Buttercream frosting works well too. I am looking forward to trying it with a cream cheese frosting.
