Great way to use up leftovers!
I made this using leftover chicken breast, grilled corn on the cob and oven roasted fries. I also added a handful of yellow squash (raw). I used a whole jalapeno which made it quite spicy, but perfect for my family. I think there are a lot of things that could be subbed.

Chicken for Breakfast! I don't think so.
I've never like Martha's recipes as they never seem to be just right. I would use breakfast (beef) sausage, pork sausage or Italian sausage or cubed ham. Maybe even Canadian bacon or Prosciutto. I also don't think corn is right and would rather use some bright colored bell peppers and at the end maybe some fresh baby spinach. Some of the recipe has merit. Just not chicken.
