Souper for a Winter's day
This soup comes together very quickly once everything is prepped. A good dish to get the kids and other family and friends involved. My son (13) stirred the pancetta while I chopped the vegetables. Later he did the sauteing. A few changes we made: added diced leftover chicken, a shallot, a bit more broth(1 cup), and used dried shitake mushrooms. Once finished, topped with our regular shake cheese and voila' a one dish meal. Excellent!

Nummmmmmmeeeeee
My husband is an avowed carnivore, but I put this in front of him and it disappeared. Followed directions to a tee and it was wonderful. Just wonder what effect on the taste using say tomato paste and fresh mushrooms would have.

Excellent soup recipe.
My husband and I absolutely loved this soup. The reason I gave it only a 4 rating was because I did not use the pancetta, and used spinach instead of kale, but otherwise followed the recipe. It makes a very large amount of soup, way more than 4 servings. Next time, I will make half the recipe.

Hearty and delicious....a keeper
I followed this recipe with the exception of using chicken instead of the Italian deli meat. Everyone in my family thought it was a great soup. I baked the chicken for about 35 minutes (a couple chicken breasts) and then chopped up the meat and tossed them in the soup. Topped with some cheese and some French bread it was a filling meal. I will definitely make this soup again.

Wow! I made this soup for Christmas dinner. Nothing but raves. By far the best soup I've ever made. This will become a regular recipe to fall back on.

sooo delic
okay, we used regular bacon and spinach instead of kale because it's what we had on hand. skipped the cheese topping entirely. otherwise, it was fabulous and next time i'll plan in advance and get the missing ingredients. i love winter soups!

Two thumbs up!
I didn't have the pancetta and romano. Otherwise followed recipe exactly and added grilled chicken over the top. Served with crusty bread. The soup was devoured by two men who don't usually eat soup, and rarely eat their vegetables. Nothing was picked out and they both asked for seconds! It's ok to go heavy on the kale. I used about 3/4 of a bag of pre-chopped kale, threw out the big stems and rough chopped the kale into bite size pieces. It disappears in this soup.
