Twelve hour cook time?
My college kids introduced me to Sriracha. It's a hot sauce with a nice flavor.....not just heat. It's the perfect sauce for this recipe; it brings some excitement to pork shoulder. My problem with the recipe is the cook time, if you brine for 18 hours or so then get up at 3:00a.m. the next morning you can do the next step and start your slow cooker so it will be done by dinner time....perfect for insomniacs. The aroma throughout the house was fantastic, serve with additional Sriracha on buns

FYI , Sriraacha sauce , is a hot pepper type of sauce found in the asian food Isle at Walmart

"What is sriracha?"
This is to answer Marleene's question. Sriracha is a type of Thai hot sauce (en.wikipedia.org/wiki/Sriracha_sauce). I do agree that unusual ingredients are often included in recipes without explaining what they are, whether there is a good substitute, or where they can be found.

What's Sriracha
I googled Sriracha and it's a sauce made from sun ripen chilies which are ground into a smooth paste along with garlic and packaged in a convenient squeeze bottle. I've seen in in restaurants and in most grocery stores. You can also order it on line, just google it there are only 5,040,000 hits. Haven't tried this so I gave it one cup.

Sriracha - aha!
It's a hot chili sauce, aka Rooster Sauce, aka other-name-for-rooster sauce. I don't do hot sauces but guess they're all pretty much the same.

Sriracha (Thai: ??????? [sirat??a]) is a type of Thai hot sauce named after the coastal city of Si Racha, in the Chonburi Province of central Thailand. This sauce is readily available in most every grocery store spice isle that sells Asian sauces and or condiments. Safeway, Tom Thumb, Albertsons, Sams Warehouse, Costco, etc. Please look before you jump.

Excellent!!
I just made this today and it is EXCELLENT. As for the reviewer that gave a 1 cup and didn't even try the recipe --- Sriracha is a type of hot sauce. It is used a lot in Asian recipes and has become a favorite throughout the USA in all types of cuisine. I don't live in the 'deep south' and I find it readily available in all the stores here. If you had googled sriracha you would have found it.

...what?? It's not in your glossary and Webster's Dictionary tells me it's not a word it recognizes. Please remember that there are many people from all over the world that read your recipes. I suspect that most of us--who are not from the deep South--might have a problem with this ingredient. So...tell us what it is, where can we find it, and most important, is there a substitute ingredient or do we leave it out of the recipe. In other words, get your editor something to do!
