I never use canned chickpeas
This is a very basic recipe that lacks flavor. Fresh chickpeas is the only way to make hummus so you have to prepare in advance--soaking at least three hours but I do it overnight, and then cooking. I simmer the chickpeas for 2 hours 45 minutes. And I always add coriander and cumen when the chickpeas are blended.

Great basic hummus recipe
This hummus recipe was very straight forward and easy to make. It's a great starting point for any other hummus combinations and gives a very nice texture. I modified the recipe by adding more lemon juice, more garlic and cumin.
