Fabulous Winter Soup
Hub gets the credit for the actual making of this one, but we both loved it. The leeks and zucchini give it a great wintry taste; the tomato gives a little extra zing to make it stand out from other chicken soups; the barley and limas boost flavor and texture. The dumplings are lighter than traditional ones. Overall it is a hearty and healthy delight. What we changed: not much. Used a homemade chicken broth and added slightly more garlic, carrots, and limas.

Delicious!!!
I love this recipe. I made the recipe exactly as stated. It was wonderful although it is a bit better the next day or even later - I froze several servings and when reheated the dumplings had broken down but the stew was even thicker and better than when first made. This one is a definite keeper. Very healthy as well, in my opinion.

Very good, very easy, would have given 4 cups, but
I made more than a few adjustments, omissions. Left out the barley (DH hates it)and limas (I hate'em)added green peas instead. Also with the dumplings, used Masa flour, had no cornmeal, and Swanson's Chx broth instead of the water. The dumplings were exceptional! I think the addition of cheese and butter made a huge difference from the same old same.
