Are the times accurate?
I found that the times in the recipe were way short; it took my fudge much longer to come up to temperature and then almost forever to come back down. I shortened the cooling temperature to 150 degrees. Hopefully it will be smoother and less grainy. I love the flavors and that is why I am trying to shorten the "wait" times.

In answer to Joyce's question, "where's the caramel" Brown sugar and cream cooked together make caramel, hence the name caramel and almond fudge :)
