Excellent recipe
This is the best Kheema recipe my husband and I have tried- and I've tried a few from traditional Indian recipe websites. The recipe also most closely resembles the standard preparation for most of my mother-in-law's Indian dishes (using yogurt, milk and lemon or lime at the end of cooking). No problems with yogurt curdling (and all we had was non-fat, though the milk was 2%). And occasionally we substituted beef with Morning Star Soy Crumbles. No complaints from the family. Excellent dish.

This a simplified version of an Indian classic; the recipe should have instructions for adding yogurt in additions of one tablespoon at a time, stirring well after each addition, and that if the mixture gets too hot, the yogurt will curdle.

Instructions for dry roasting the spices would also help and would result in a better tasting recipe.

Try some authentic Indian recipes for this dish, instead.
