Yorkshire pudding should be served immediately
Make the gravy before you put the Yorkshire pudding into the oven. Whisk Yorkshire batter JUST until smooth. Overbeating makes it tough. Yorkshire, like popovers, falls when it is taken from the oven. Seat everyone at the table and have the meat sliced before you remove the light Yorkshire with crisp edges from the oven.Slide it onto a large plate, cut it quickly with a sharp knife, serve and eat. You'll need the extra gravy for the Yorkshire and mashed potatoes! Delicious.

Sophisticated and Over-the-TOP!
I've made this recipe 4 times during holiday special events. It's time consuming but WORTH IT! The first year, I tripled the recipe due to the size of my meat was 4x the size here. I would suggest that you not increase the vegetable Jus more than double no matter how many you are serving. It is wonderful and should be included but a little goes along way. Do not skip this part. I would suggest doubling or tripling the Rub for the default meat size! I served with a whipped horseradish sauce.

This was a fantastic meal! Full of flavor, absolutely loved it! Yorkshire pudding wasn't necessarily my favorite, but still had a good taste! Meat turned out excellent!
