regardign the two cups of oil
The two cups are only to fry th echicken. the oil is drained off nad the remainder should be stored in an air tight container int eh fridgerator for a future use. The oil is not kept in teh recipe as it is drained off of the chicken through a strainer. THe recipe is delicious.

Ridiculous!
Are you sure that wasn't a typo? I mean, let's get serious--2 cups of oil? May as well call it deep-fried chicken and rice. IF I tried it, I would lose almost all the oil--- 2 TABLESPOONS is plenty. Kind of a mild list of ingredients--not my style. I'd add green onions and maybe fresh cilantro. Maybe bean sprouts. Ot just chuck this recipe and make Chinese Chicken Salad---Sau See Gai simplified.

2 cups of oil?
The recipe looks good and i will be making a modified version of this soon...but using 2 cups of oil to stir-fry some chicken sounds pretty excessive, I definityly won't be trying this. Plus....its 1300 calories!

Awesome
This was a really great recipe. I subbed Canola oil and Romaine lettuce. Whole family liked it. That's a rarity.
