Easy and Delicious
Best fried rice I ever made. Since I have hearty bacon eaters, I increased from 1/2 lb to 1 lb bacon. Used low sodium soy sauce and added 1 Tbsp black bean garlic sauce. Served with home made egg rolls. Raves all around by my gang.

Bacon Fried Rice
I partially fry my bacon first, then add a chopped onion and "uncooked" rice (1 cup)and finish cooking the bacon, onions and "just brown" the rice, stir often so not to burn the rice. I then add 2 cups of beef broth, let it simmer (covered) for approx 18 min. When done I add I tsp. of low salt Soy Sauce, stir then add a beaten egg and cover until ready to serve with a few chopped green onions on top. Works great!

Fry eggs separately?
I never fry the eggs alone. I fry the rice for a while, then crack the raw eggs into the rice. Never have a problem with texture or rice pellets that way.

Outstanding!!!
I haven't tried cooking from this recipe but it is nearly identical to one that my wife (who is Chinese) and I have cooked and greatly enjoyed for years. The only differences are that we use yellow onions and add soy sauce (light) to taste. Other proportions may differ a bit since we don't measure anything to make this. Incidentally, the eggs are supposed to disappear except for small pieces that can sometimes be seen.

UGH!
Don't know how Dorothy did it but I followed the recipe exactly and ended up with soy flavored rice pellets. The eggs disappeared, the bacon and green onions were OK, but everything tasted only of soy sauce and far to salty and oily! Perhaps it was the fault of my soy sauce? But, never again!
