I would imagine with only 1/3 cup of oil it would absorb most of it when frying. As for the milk I would add it all at once.

There isn't any flour because...
it is a 5 ingredient recipe as it says in the title. Liz wrote it that way because it's her recipe, we all have different qways of making things...I don't know any recipe that's written in stone....unless it was one of Wilma or Betty's on the Flintstone's. I do love 5 or less recipes.

Attention to Detail!
It is unfortunate that no one is proofing or editing these recipes before they are posted. If one was a beginning cook, without the experience or knowlege of how to make a roux, following this recipe would be a disaster! Possibly ruining a special occasion, or the wasting of food for someone who possibly couldn't afford it. Cooking.com, get on the ball!!!

Missing steps????
Ummm aren't there some steps missing here, like draining oil from pan, but leave just enough to coat bottom, stir in flour until oil is soaked up, add milk a bit at a time, constantly stirring until gravy is consistency that you want, ???? just saying......
