We were tired of the same old chicken so my son and I tried this. We didn't have the pineapple so my son substituted half a banana chopped up and 1/2 C oranage juice. It as delicious!

I was looking for a different 'Curry' recipe and found this one. It's good, but not great. I might make it again in a pinch but some of the ingredients are not things I keep on hand so I couldn't do it in a hurry. Also, I used Jamaican Curry which has a much different flavor than a PanAsian curry and with the fruits I think it made the difference. I served with roasted sweet potatoes drizzled with butter and sweet rice. It's a nice and easy recipe and I think anyone could make it. If you want to serve more than 3 adults you should add to the recipe.

I make this recipe regularly. I keep the pineapple & raisins on hand so I just have to make sure I have garlic, onion, and peppers. Usually I leave out the chicken for a vegetarian meal but it is delicious with the chicken too!
