Unbelievable!
Took quite a bit of time for prep, but was reallllllly worth it. These are great. And the icing is so good, you'll want to eat it right out of the bowl.

Wonderful recipe for any occasion
I cut down 1/4 of sugar and bake it with 2"x4" small loaf pans for 40 minutes or with 9-cavity mini loaf pan for 35 minutes. It is delicious without frosting. My husband asked me to bake this cake on his birthday.

Grand Cupcakes
This certainly satisfies my craving for carrot cake!! It will yours, as well!** I found this remarkably easy to mix up and it baked like a dream. If you don't happen to have all the frosting ingredients, you can do w/o orange peel, or can simply whip up cream cheese, with a bit of powdered sugar, and that makes a delicious frosting as well. Hope this encourages you to try it. P.S. If you don't happen to have the LARGE muffin tin, use the regular and cook for about 5+ minutes less.

Good recipe - even without the icing (for those of us watching the calories).
The ginger adds nice flavor note. Would like it if recipes would give calories, both with and without the icing!
