Salt in soak water will soften the skins of beans so they plump and cook more evenly. Doesn't make the beans salty,but you should drain and rinse them B4 cooking in fresh water

It is a myth that salt added to soaking and cooking water makes beans tough. To the contrary, the salt helps to soften the beans.

I have not made this soup--yet! However, it looks delicious and I do plan to make it very soon. I do have a question. Why does the recipe call for adding salt to the bean cooking water? Every other recipe I have or have seen, admonishes the cook to NOT add salt when cooking beans--it makes them tough. These other sources say to add the salt after the beans have cooked. So, is there a reason for changing this advice for this recipe?

I love soup. This was the best I've ever had. My neighbor is bedridden and has a hard time eating. I put a good amount into the food processor and he also smiled as if it was the best he has ever eaten. It takes a little bit of time to completely prepare but is definitely worth it.
