Great combination!
I've always made zucchini and have my husband's late aunt's recipe, which beats all others I've tried. But the addition of the cranberries made this recipe a real winner. Since my bag of frozen zucchini was 2 cups, that's what I used and it was fine. I overlooked the step to chop the cranberries. I'm sure they would be much better distributed if chopped. My husband said it was a keeper.

Fabulous & Freezes Well
This is my favorite cranberry recipe. Every year we attend a Cranfest in NJ & I'm always trying new recipes that incorporate the fresh berries. I wouldn't change one thing with this recipe ~ It makes 2 ample sized loaves which freeze well.

A very dense bread
While this bread is tasty the batter is more like a true dough, very thick. Make sure not to overmix the batter or the bread will turn out chewy. Overall good flavors. I couldn't find fresh or frozen cranberries, so I used dried cranberries refreshed in hot water for 10 minutes. The bread turned out very good.
