Delicious and Flavorful
This recipe was great! I had a few modifications, however. Instead of egg substitute, I used 2 eggs and 3 egg whites. I also used only 1 cup (4 oz) of Mexican cheese and 1 oz of Parm. I did not cook my onions and mushrooms in oil, but used cooking spray instead to save on calories. I also used skim milk instead of 2%. I felt that 1 cup may have been just a BIT too much liquid, but this could have been because I used skim milk instead. Even with all of these changes, it was DELICIOUS! YUM!

YUMMY!!
This was excellent! I used fresh steamed spinach and whole eggs but it all worked out REALLY good. I re-used aluminum foil deep dish pie plates and had to use two of them. I will make this again for sure!
