This was delicious. I served with spiced wild rice and steamed french style green beans. It's definitely a weekend or special occasion meal as it takes quite a bit of preparation and time to cook... if you're in a hurry, don't make this. But the flavors are wonderful. I also have a KitchenAid stand mixer with meat grinding attachment which I used because I guess I'm too cheap to buy the ground lamb... plus I got just the cut I wanted. I'm not a huge fan of eggplant and neither is my husband but you really can't taste the eggplant, at least it's not the primary flavor. So if you like eggplant and someone, like kiddos, in your house doesn't... this would be a good dish to make because you'll all be happy.
