question
This isn't a review. Recipe sounds good. I was wondering if you could leave the ribs in the brine overnight, or more than 1 hour. To H G -- I always use a dry rub on my ribs anyway, and do it overnight. Gives it more flavor that way. I'm looking forward to trying it this way.

A question
This is not a review of the ribs; it is a request for clarification. In the very first paragraph, it says “, , , coat them with the spice rub, wrap tightly in plastic, and refrigerate overnight before grilling.” In the second paragraph under DIRECTIONS, it says “. . . rub each side of racks with 1 tablespoon spice rub; refrigerate racks 30 minutes.” I’ll be glad to do either one – overnight or 30 minutes – just tell me which.

THIS WAS VERY EASY AND THE END RESULTS VERY GOOD
I ADDED 1 QT. APPLE JUICE TO THE BRINE AND 3 QT WATER THIS WAS VERY EASY ANYBODY COULD THIS , SOME OF THE BEST BABY BACKS IN A LONG TIME I DO B-B-Q FOR A LIVING VERY GOOD BONES

Love those ribs!
I cook baby backs all the time and I was anxious to try the brining method. Wow! My ribs came out tender and very flavorful, so I will definitely be doing this from now on. One variation I used was to tightly wrap the ribs, first in plastic, then in foil after about 3 hours of cooking. I tend to do this as a matter when cooking ribs and can't seem to break the habit...probably because I've always been pleased with the result. This dry rub has the perfect flavor and I'll be using it from now on.

Best BBQ recipe out there
My father turned me onto both the process and the recipe about 3 years ago. The ribs came out nicely spiced, fall apart moisture, and bone sucking good. I just can't imagine doing anything but a dry rub now, and the brining process is perfect. The process takes some watching (chips dry out and catch on fire) and make sure to let the ribs set in a brown paper bag for about 10 minutes. Again, highly recommended, and turned me on to America's Test Kitchen. Happy since.
