Leeks Need to Be Washed!
I love leeks and leek soup; make 'em all the time, but in reviewing this recipe I can't believe you didn't say anything about washing the leeks. Leeks grow with soil between every layer and if you are not familiar with that fact, this recipe would be ruined. I will acknowldege that there is a "leeks - link" and it does say they need to be washed well, but, really, how many people perusing a recipe bother reading every link? Washing should be listed in directions just like "cutting them up!

LOVED IT!!!
I wouldn't say this was all that "quick", since peeling the potatoes and cleaning and cutting up the leeks took a bit of time, but it was definitely worth it! I actually used just regular butter instead of unsalted because that was what I had on hand, and I also added a small yellow onion, but the rest was exactly as is. This one is a real "keeper" and I will make it again and again.

An easy and absolutely delicious soup. I like this chunky version better than the traditional pureed recipe. Great and hearty as it is, or add a little milk (less than 1/4 cup) after cooking for a slightly different flavor and finish.
