Dividing recipe for 2
As I cook for one I routinely divide recipes down. This would feed 2 people. 2 bread , 5 tbsp. cream cheese, 2 med. peaches, 8 tsp. pecans,8 tsp whole milk, 8 tsp buttermilk, 5 tsp syrup, 1 egg, 2 tsp butter, 1 tsp sugar, 1/3 tsp cinnamon and vanilla.

Not so Good
Followed the recipe to the letter. Found it to be rather Blah and more like a soupy bread pudding. Never again..

Rave reviews at Coffee Hour
I used low-salt whole grain bread from a local farm stand, where I got the peaches. I also used Neufchatel Cheese instead of cream cheese. I assembled the pans Saturday evening and refrigerated, covered with plastic wrap. Before church, I preheated the oven in the parish hall, and baked the pans for 25 minutes then turned the oven off and covered each pan with foil, leaving the pans in the oven during church. PERFECT, and every last bite was gobbled up.

This is the best french toast.
A great do ahead meal. It is delicious, rich, and filling. We have used apple pie filling when we could not buy peaches and have substituted cashews and other nuts for pecans. We serve this with maple sausage for a wonderful dinner.

What about
I'm only cooking for two people. My math is pretty bad, so can anyone tell me how to cut this recipe by 2/3? I did have it at a friend's house and it was terrific, but it can't be frozen for later use. I'd appreciate your input. Thanks

Used 4 oz soy Toffutti cream cheese, 1 c soy milk w/1 Tbl lemon juice replaced both milks. canned peaches, egg beaters,1 tsp instant coffee granules replaced coffee liqueur. Omitted sugar. used 9x13 pan 4 slices Orowheat 7 grain bread only 1/2 inch thick. Maybe should have halved the liquid ingredients for the thinner bread. Flavor was good but bread was to thin I think. cooked 45 minutes, still gooey in the middle. will try again with half liquid

Yummy!
This was easy & delicious! The substitutions I made were French bread instead of whole grain, 14 oz can of peaches instead of fresh (sweetened with splenda) almonds instead of pecans & skim milk instead of whole. Otherwise, ingredients as listed. I made it in an 8inch square dish - it ony took 5 slices of bread, & I cut the bread to make sure there was a layer of bread in the bottom of the pan. I refrigerated it overnight also.

A crowd pleaser
This dish was easy to assemble and made a great presentation with a dusting of powdered sugar. Definitely use lowfat cream cheese. I didn't and thought the dish was a touch rich for the average breakfast eater. Also, the liquid cooks to a custard, so make sure the bread fits fairly sungly inthe pan.
