GORGEOUS POTATO SALAD...and DELICIOUS!
This is the best recipe for Potato Salad I could ever tell you about--as colorful as a lighted Christmas Tree. Try to find the fingerling potatoes that are mixed--dark purple and regular color. I used the rice wine vinegar. I followed it to the letter! Maybe extra on the red bell pepper and the parsley and chives. Don't chop the parsley too fine, nor dice the red bell pepper too small. I sliced my potatoes as nice-sized chunks. The colors are too pretty to hide! It'd gorgeous! And DELICIOUS!

Great Recipe!
This is an outstanding potato salad recipe. Don't be intimidated by the anchovy paste, if you're not familiar with it. No hairy fish - just a delicious salty, briny flavor; not unlike really good black olives! And, the essence of little fishies is so good for you! Very fresh and seasonal version of this classic salad.
