Butter & Sugar makes everything tastes good
I'm very health conscience and would like to ask Gail, ME the source of the article about mini carrot processing? I'd really like to know what they're treated with. As for the recipe, it's pretty basic. I liked the honey substitution for sugar although pretty much any sweetener can be used--agave, maple syrup, brown sugar etc. Adding a fresh chopped herb like thyme, parsley, basil etc is nice too. When I have the time I like to use large carrots and cut them in to matchsticks to cook.

Glazed baby carrots
The reason nothing will ever disguise the bad flavor of "baby" carrots is that they are processed with something coating them. I was buying baby carrots for my dogs to snack on when I read an article on this, not good for dogs, can it be good for us! They are "baby" carrots cut down from big carrots then coated. Better to spend some time cutting up the big ones, then they will taste good. Good recipe when used with real carrots!

My Mother's recipe for "Carrot Coins"
This is the same recipe we always call "Mother's Carrot Coins" where typical carrots are sliced into coin-size rounds, and we make them sixty years later for home or potluck. Any kid will eat these carrots. We Did,we asked for them growing up, they're great!!!

baby carrots
I hope u have found a way to make them edible...lol. Have used them every way: in stews, roast, soups and God knows how and they are always nasty tasting. however, this is a new way to me so i will try it. And, i know it will be really good with "real" baby carrots.
