Had to make something with apples for a luncheon. This soup was wonderful. Used granny smith apples, alittle tart, so added some sugar, small amount. The gals just raved about it. Could not quite place the taste of cumin, but then when told, thought it was delightful. Just the right amount of heat. Added some fresh thyme, fresh grated nutmeg on top. Put a fresh sprig of rosemary on top for presentation. SO GOOD

Easy and tasty
A very low calorie, low fat meal. Although I was a little leery about the combination of apples, curry and carrot, it was a pleasant surprise and a lovely light lunch.
