Super tasty!!
I altered this quite a bit so I wouldn't have to go back to the grocery store. I used ground coriander instead whole, dried cilantro instead of fresh (I will use fresh next time, for sure), 1 can of Hunts fire-roasted tomatoes instead of fresh, x3 baby red potatoes diced into 1cm cubes instead of one inch cubes, x2 15oz cans of chickpeas instead of x1 19oz (one can didn't seem like enough), and added 1/2c chicken broth. We ate it like stew with nothing added. Yum!! (My toddler even ate some!)
