Recipe for 1 or 2-how refreshing!
Tried this and it was delicious and I am perfectly capable of multiplying if I want to make a larger batch- it is good enough to do it!

Outstanding
This was creamy and so soothing to the palate. Yukon Gold are the best potatoes out there. I sprinkled the spuds with paprika for pizaz then added some finely shredded swiss cheese over them. Try it!

It probably tastes good but ONE mashed potato is a really stupid idea.
