Ali's Mexican Fill-'Er-Ups!

These are my version of homemade quesadillas, without all the grease of frying them. You'll love the crispy outside with the stick-to-your-ribs, but healthy ingredients that pour out of these. :-) You can also try these with shredded chicken, yum.
4 flour tortillas
1/2 lbs ground turkey or beef
1 red onion
1 red bell pepper
1 green bell pepper
1 small package mushrooms (produce section)
1 cup frozen or canned corn
3/4 cup of your favorite salsa
1 can refried beans
2 cups mexican style shredded cheese
1) Preheat oven to 400 degrees.

2) Dice the onion, then roughly chop the mushrooms and bell peppers.

3) Brown the ground meat, and drain.

4) Sautee the onion, bell peppers, mushrooms, and corn in oil or butter (your choice) until bell peppers are slightly softened.

5) Add the meat and salsa to the vegetable mixture and let all combine and become warm. Set to low.

6) Spray the tortillas with cooking spray to prevent sticking, and lay them sprayed side down, on a baking sheet.

7) Spread a layer of the refried beans on one half of the tortilla.

8) Sprinkle a layer of cheese on top of the beans.

9) Add a layer of the meat/cheese/salsa filling on top of the cheese, and then cover with another layer of cheese.

10) Flip the other side of the tortilla over the fillings, and press down to keep closed.

11) Bake for 10 minutes, flip them carefully, and then bake for another 10 minutes. Serve with a side of romaine lettuce and sour cream. Enjoy!
