Shrimp Scampi with Parsley & White Wine

An easy to make, fresh tasting seafood main dish. Only 30 minutes total time.
3/4 lb linguine
1 lb extra large shrimp (flour for dusting)
4 tbsp of extra virgin olive oil
1/4 c sweet butter
1 tbsp chopped garlic
1 tbsp FRESH squeezed Lemon Juice*
1 tbsp grated lemon zest, or more to taste*
3 tbsp chopped FRESH parsley
1/4 c. Vermouth
1/2 c. chicken broth, low fat, low sodium
1/8 tsp. red pepper flakes
2 tbsp Parmesan cheese (plus more for garnish)
1/4 c. Sun-dried tomatoes in olive oil, slight chopped
salt & pepper to taste
*Half lemon and half lime juice and zest also good
Cook pasta until al dente.

Devein shrimp, and dust with flour seasoned with salt & pepper. Shake off excess flour.

Saute shrimp in the olive oil for 2 mins. on each side. Remove shrimp.

Add butter, pepper flakes & garlic and saute 1 min.

Add lemon juice, zest, parsley, chicken broth, and whisk in 2 tbsp of parmasan cheese. Add the sun-dried tomatoes and the wine, and saute to reduce a couple of mins. If needed, add in more chicken broth. Add the shrimp back in, and heat.

Pour over linguine, and top with more Parmesan cheese.

Pasta for two?
3/4 lb pasta for two servings! Good grief! No wonder we are all obese.
