This yummy corn casserole is versatile, which is great! You can make it to please any audience. Make it spicy w/jalapenos for those of us who love a kick! Or make it cheesy for the kids! Bon appetite!
1/4 cup butter (1 stick)
1 15 oz can creamed corn
1 15 oz can corn
1 box Jiffy Cornbread Mix
2 eggs
1 cup sour cream
Optional: 1 - 4oz can chopped green chilis OR 1 - 4oz can chopped jalapenos for an extra kick! Can also add 1 cup shredded cheese (cheddar works well).
Melt butter in microwave (approx 1 min). Pour corn & creamed corn in bowl w/butter & mix. Add cornbread mix & stir. Add eggs (can beat them before adding, or stir vigorusly). Add sour cream & mix well. Add any optional ingredients & stir to incorporate. Grease a 3 quart baking dish & add corn mixture. Bake at 375 degrees for 50-60 minutes uncovered. Enjoy!

My Mother and sister takes this to potlocks and most of the time there is nothing left to take home. If there is any left someone usually ask if they can have some to take home. I love corn and this out of the world.
