This yummy corn casserole is versatile, which is great! You can make it to please any audience. Make it spicy w/jalapenos for those of us who love a kick! Or make it cheesy for the kids! Bon appetite!
1/4 cup butter (1 stick)
1 15 oz can creamed corn
1 15 oz can corn
1 box Jiffy Cornbread Mix
2 eggs
1 cup sour cream
Optional: 1 - 4oz can chopped green chilis OR 1 - 4oz can chopped jalapenos for an extra kick! Can also add 1 cup shredded cheese (cheddar works well).
Melt butter in microwave (approx 1 min). Pour corn & creamed corn in bowl w/butter & mix. Add cornbread mix & stir. Add eggs (can beat them before adding, or stir vigorusly). Add sour cream & mix well. Add any optional ingredients & stir to incorporate. Grease a 3 quart baking dish & add corn mixture. Bake at 375 degrees for 50-60 minutes uncovered. Enjoy!

Golden Corn Casserole
I tried this recipe and it was a big hit. It was easy to make and I had all but two of the ingredients. We loved it and will make it for Thanksgiving. I love easy and delicious casseroles like this one.
