Black Bean and Roasted Corn Chili

I made this one day when I had a bunch of leftover stuff and everyone was really hungry. What a hit! It was all gone in a matter of minutes!
RECIPE INGREDIENTS
1 Tbs olive oil
1 large onion, chopped
6 cloves of garlic, minced
4 cans of black beans, rinsed and drained
1 small can green chilies
1 tsp salt
3 Tbs chili powder
1/2 tsp cumin
1 tsp sugar
1 tsp oregano
1 small can tomato paste
2 cups water
4 ears roasted corn kernels
1-2 cups shredded or chopped chicken (optional) (We are vegetarians and I used 1 bag of Quorn brand chicken tenders for this)
DIRECTIONS
1. Saute onions and garlic in oil until cooked through.


2. Add beans, chilies, salt, chili powder, cumin, sugar, oregano, tomato paste, and water. Simmer 10-15 minutes, stirring occasionally to keep from sticking to bottom of pan.


3. Add corn and chicken. Simmer until heated through. Serve with cheese, sour cream, chopped onions and crackers or bread, if desired.
