Spicy Pumpkin Cake

This cake contains all the spices that are a Delight of the season, you may enjoy with a great cup of coffee or milk and frost it if you have a sweet tooth. Anyway you serve it, it's a Delicious cake.
4 cups cake flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon of ground cinnamon
¼ teaspoon freshly grated nutmeg
¼ teaspoon ground cloves
1 teaspoon of pumpkin spice
2 cups of light brown sugar
2 sticks ( 1 cup) unsalted butter
At room temperature
4 eggs (large)
1 cup butter milk
1 can (15 ozs) 100% real pumpkin
Preheat oven at 350 degrees. Spray 13 ½ X 9 ½ square baking pan with cooking spray and dust with flour, tap out excess.

Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves and pumpkin spice.

In a separate bowl beat butter and brown sugar with electric mixer use at medium speed until fluffy (beat 3 minutes) add eggs one at a time, scraping down sides of bowl after each addition. Reduce speed to low, mix in flour mixture in 3 additions incorporating butter milk slowly one bit at a time. When flour mixture, butter milk, brown sugar and butter are combine, add the pumpkin and also combine, pour batter into prepared pan.

Bake cake for 60 minutes and when a wooden skewer inserted comes out clean remove from oven. let cool onto rack for 30 minutes then carefully remove cake from pan onto wire rake until completely cool before serving.


Frost with butter cream or cream cheese frosting.
