Blackberry Spice Cake

A quick and easy cake that's great with coffee in the morning or with ice cream for dessert.
RECIPE INGREDIENTS
1 stick butter or margarine
2/3 cup sugar
2/3 cup light brown sugar
2 eggs
1 Tbs vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1 cup blackberries, mashed
2 cups Pioneer Baking Mix
DIRECTIONS
Preheat oven to 350 degrees.


Cream butter, sugar, brown sugar, eggs, vanilla, cinnamon and nutmeg in large bowl. Stir in mashed blackberries. Stir in Pioneer 1/4 cup at a time until batter is right consistency*.


*Amount of Pioneer may vary slightly depending on how juicy blackberry are - adjust amount based on batter consistency - should be a thick, dense consistency, similar to a thick pound cake batter.


Butter and flower 8X8 cake pan and pour in batter. Bake at 350 degrees for 40-50 minutes until dark golden brown and knife inserted in middle comes out clean. Remove cake from pan onto cooling rack. Serve warm.
