Buffalo Chicken Pizza Bites

This is a recipe I created for the Rachael Ray and USA Today, March Menu Mania recipe contest. It came in the top four. I had alot of fun but mostly have enjoyed making these pizza bites for friends and family. Its a great recipe, I hope you try it.
RECIPE INGREDIENTS
2 packages Pillsbury Crescent Rolls
1 small red onion, thinly sliced
1 cup water
1/2 cup sugar
1 cup apple cider vinegar
4 cups cooked and shredded chicken
2 tablespoons butter
1 teaspoon garlic powder
1 teaspoon Mrs. Dash
salt to taste
1/8 teaspoon Cajun seasoning
1/8 teaspoon red pepper flakes
1 tablespoon flour
1/2 cup Frank's Red Hot Cayenne
Pepper Sauce (original)
1 cup of milk
4 ounces blue cheese, crumbled
4 ounces mozzarella cheese, grated
cilantro, chopped for garnish
DIRECTIONS
Preheat oven to 375 degrees.


In a microwave-safe bowl, heat 1 cup of water for two minutes.


Add cup of sugar and a cup of apple cider vinegar.


Add sliced onions and set aside.


Stretch dough out on cutting board.


Cut each sheet of dough into 12 squares.


Stretch each square to fit into 2 ungreased cup cake tins, a total of 24 crescent cups.


Pierce bottom of dough with a fork.


Bake at 375 degrees for 8 minutes.


In a small sauce pan, melt 2 tablespoons butter.


Add teaspoon garlic powder, teaspoon Mrs. Dash, teaspoon salt, 1/8 teaspoon Cajun seasoning, 1/8 teaspoon red pepper flakes.


First, whisk in 1 tablespoon flour, then whisk in 1/2 cup of cayenne pepper sauce and 1 cup of milk.


Bring to a boil and simmer on low for five minutes.


Add sauce to shredded chicken.


Fill crescent cups with chicken.


Drain and dry red onion, place on top of chicken.


Top each with mozzarella and blue cheese.


Bake for eight minutes.


Remove from pan and garnish with chopped cilantro and serve.
