Sea Bass and Tomato Basil Stew

Delicous Healthy Fall Sea Bass and Tomato Stew
RECIPE INGREDIENTS
1 pound cut into 4 pieces Chilean Sea bass
4 Whole Ripe Red Organic Tomato Diced
15-20 Fresh Organic Basil Leaves Coarsely Chopped
8 Fresh Mint Leaves Whole
Juice of 3/4 Organic Lemon
2 Cloves grated Fresh Garlic
1/2 half Chopped Yellow Onion
1 large stalk of Chopped Celery
Couple of Pinches of Ground Cloves
Couple of Pinches of Smoked Paprika
2 Bay Leaf Whole
2 Tblsp Butter (optional)
DIRECTIONS
1.Mix Diced Tomatoes, Garlic, Basil and Spices in a bowl


2.Melt Butter in Sauté Pan This is optional if you do not prefer to use butter just pour stew mixture directly onto non-stick surface.


3.Pour tomato basil mixture into heated Buttered Sauté pan and stir.


4.Place sea bass on top of tomato mixture


5.Place bay leafs and mint leaves spread out over mixture


6.Pour Lemon Juice over sea bass and tomato mixture


7.Cover with lid and reduce heat to Medium Low, simmer for 5 to 7 min until sea bass is cooked all the way through and opaque in color, then using Spatula or Spoon Place sea bass in a bouillon dish or stew bowl


8.Remove Bay Leaf from Pan and set aside


9.Pour Tomato Basil Stew Mixture over and around Sea bass


9.Garnish with a Mint or Basil Leaf.


10.For a soupier consistancy, 1 cup veggie or chicken stock can be added to tomato basil mixture while simmering.
